my spaghetti

2 medium zucchini, chopped
2 medium onions, chopped
1 lb lean ground beef
2 jars organic Ragu
1 lb whole wheat pasta

Sauté the veggies in olive oil. Add cooked ground beef. Add Ragu, turn temperature down to simmer. Cook pasta according to directions. Mix together. Serve with Parmesan cheese on top. Enjoy!

(You may use other veggies including carrots, broccoli, spinach, green onion, etc. The zucchini and onion cook quickly, so I use them more. I like chopping them into big pieces, making the final dish chucky.)

chicken enchiladas

4 cups chicken, cubed & cooked
1 cup sour cream (or plain yogurt)
1 cup salsa
enchilada sauce (1 packet OR two cans)
4 oz green chilies
10 small flour tortillas

2 cups grated cheese
1 green bell pepper, diced
1 onion, diced

Preheat oven to 375º.
Mix chicken, sour cream (or plain yogurt), salsa, and green chilies. Fill each tortilla with mixture and tightly roll together. Pour a little enchilada sauce on the bottom of a casserole dish (to prevent sticking). Line filled tortillas in casserole dish. Top with remaining enchilada sauce. Top with cheese, bell pepper and onion. Bake uncovered for 25 minutes, or until heated through.

apple crisp

5 to 6 cups sliced baking apples (4 medium)
1 cup whole wheat flour
3/4 cup packed brown sugar
1/3 cup butter or margarine, melted & cooled
1 tsp baking powder
3/4 tsp ground nutmeg
1 egg
ice cream, if desired


Heat oven to 350 degrees.
Arrange apples in ungreased shallow baking dish. Stir together remaining ingredients (except ice cream) until crumbly; sprinkle over apples. Bake 35 to 45 minutes or until apples are tender. Serve warm with ice cream.

bean dip

2 cans refried beans
2 cups cheddar cheese, shredded
2 cups monterrey jack cheese, shredded
1 cup salsa
1 cup sour cream
8 oz cream cheese, softened
1 tsp garlic powder
small onion, chopped
2-3 green onions, chopped
1 small tomato, chopped

Heat oven to 350 degrees.
Mix refried beans, 1 cup cheddar cheese, 1 cup monterrey jack cheese, salsa, sour cream, cream cheese garlic and chopped onion together. (I use an electic mixer.) Pour into casserole dish. Top with remaining shredded cheese. Bake uncovered for 20 minutes or until bubbly. Top with green onions and tomato. Serve with chips, veggies, etc.
